The Origins of French Champagne
The history of Champagne is the result of an almost accidental discovery. In their attempt to reproduce Burgundy wines, winemakers in the Champagne region faced an unusually cold winter. This halted fermentation, leaving the wine incomplete in the cellars. When spring returned, dormant yeasts awoke, restarting the fermentation process and producing carbon dioxide. Trapped within the bottles, the gas caused many fragile bottles to burst—yet those that resisted unveiled a sparkling wine.
It was the Benedictine monk Dom Pierre Pérignon who, in 1668, perfected the method. He introduced the blending of grape varieties, thicker bottles sealed with cork and wire, and underground cellar storage. Preparing the Bottle
The bottle must be perfectly chilled, ideally to 6°C. This ensures the glass is fragile enough to break cleanly. Place it in an ice bucket for at least twenty minutes. Remove the foil and loosen the wire cage slightly, keeping it in place to prevent premature popping.
Finding the Weak Point
Locate the vertical seam running along the bottle—the weakest point. Hold the bottle at a 45-degree angle, thumb in the base, ensuring no one stands in front of you.
